Ingredients
  1. 2 slices rustic white bread or sourdough bread
  2. 1 tbsp extra virgin olive oil, divided
  3. 2 ounces Wisconsin Whole Milk mozzarella cheese, shredded
  4. 1ounces Wisconsin feta cheese, crumbled
  5. 2 cups fresh spinach
  6. 4 Roma tomato, cut into slices
  7. 2 tbsp black olives, diced
  8. 1 tbsp red onion, diced
  9. 2 tsp fresh basil, chopped
  10. 1/4 tsp garlic, finely minced
  11. Freshly ground black pepper, to taste
Instructions
  1. In a medium non-stick skillet over medium-high heat 1 tsp olive oil. When very hot, add garlic and spinach and sauté until spinach begins to fade, about 30 seconds. Turn off the heat and add chopped basil. Set aside.
  2. Over one slice of bread evenly spread mozzarella and feta cheese. Arrange tomatoes in a single layer over cheese. Over tomato layer, spread spinach and basil mixture, add olives and red onions. Sprinkle with freshly ground black pepper and top with another slice of bread.
  3. Heat another 1 tsp olive oil over medium-low heat and arrange sandwich. Cook until bread turns slightly brown, about 3-4 minutes, remove from skillet. Heat remaining 1 tsp olive oil and roast sandwich on the opposite side over medium-low heat. Cover skillet and cook for another 2-3 minutes.
  4. Serve immediately.
