For most of us having tea or coffee is a usual everyday thing. Someone drinks them to wake up at last; somebody else needs them to increase blood pressure, for others it is a habit to have a cup of some drink in the morning. But very few of us really care about bits with these drinks.

Try to make something sweet

It doesn’t matter whether it’s a meat sandwich or a piece of sweet cake. In my family, I am responsible for food that we have with our drinks in the morning or for afternoon tea. We prefer sweets and in most cases, they are homemade. I can buy of course some cookies or chocolates, but it’s more pleasant to eat sweets that I made with my own hands.

So, I surf the internet quite often and my main purpose is to find some new recipes. The last recipe I faced on this blog was exactly that what I needed.

Great pecan pie cookies recipe!

We like cookies very much. I adore having coffee with them, my husband and kids prefer to drink tea or cocoa, biting cookies.

According to the recipe pie cookies were supposed to be full of nutty flavor.

For these cookies I used bought dough, so cooking didn’t take much time. I got wonderful pecan cookies that were a yummy with our morning drinks. I thought we would have some pieces for teatime but no crumbs were left after breakfast. It means that following this recipe was a great idea.

Ingredients
  1. prepared single pie – 1 crust
  2. butter (melted) – 2 Tbsp.
  3. pecans (chop them) – 1\2 C.
  4. packed brown sugar – 1\3 C.
  5. corn syrup – 1\4 C.
  6. eggs – 2 pieces
  7. salt – 1\8 tsp.
  8. semi sweet or milk chocolate chip – for decorating
Instructions
  1. Mix butter, pecans, brown sugar, corn syrup, salt and eggs in a large non-stick pan. Get the mixture thickened, cooking on the stovetop over medium-low heat. Take the pan away from heat and put aside.
  2. Cut out circles of unrolled dough with a 3” cookie cutter. Fold about ⅛-1/4" up on the edges.
  3. Fill each circle with 1 tablespoon of the pecan mixture.
  4. Put on a pan lined with parchment and bake in a preheated (to 400 degrees) oven 8 minutes, until filling is set. Take out from oven and cool on a wire rack.
  5. Put chocolate chips in a small zip lock-bag. Heat in a microwave about 15 seconds until mostly melted. Drizzle chocolate over the cookies. Chill until set.

  1. 1 1/2 cup flour
  2. 1 1/2 tsp baking powder
  3. 1/2 tsp salt
  4. 1 1/2 cup sugar
  5. 3/4 cup unsalted butter
  6. 2 eggs
  7. 3 tbsp fresh lemon juice
  8. 1 heaping tbsp lemon rind
  9. 1/2 cup Greek Yogurt
  10. 1 cup raspberries
  11. 1 1/2 cup powdered sugar
  12. 3 tbsp lemon juice
  13. 1 tsp lemon rind
Instructions
  1. Preheat oven to 350 F and grease a 9x5 loaf pan with butter or use non-stick cooking spray.
  2. In a medium bowl, whisk flour, baking powder and salt. Set aside.
  3. In a bowl of standing mixer combine sugar and butter and pulse for 3-4 minutes. Add eggs one at a time and beat after each addition. Add lemon rind and juice. Add flour mixture, Greek yogurt, then gently stir raspberries.
  4. Bake for 40-45 minutes or until toothpick inserted into the cake comes out clean. Remove from heat and let cool.
  5. Meanwhile make the lemon glaze: in a bowl, combine powdered sugar, lemon juice, lemon rind, and a splash of milk. Drizzle glaze atop of cooled cake.

  1. 3 whole ripe bananas, peeled
  2. 2 tbsp butter
  3. 2 tbsp brown sugar
  4. 1 1/2 cup vanilla ice cream
  5. 1/4 cup slivered almonds
  6. 2 tbsp honey
  7. 2 tbsp chocolate sauce
Instructions
  1. Melt butter in a skillet over medium heat. Once it’s golden add brown sugar and stir. Add bananas and fry until a golden color appears on each side, about 3-4 minutes. Make sure the bananas are evenly coated with the butter mixture.
  2. When the bananas are caramelized at all sides transfer them to the serving plate. Cut each banana diagonally into 3 pieces. Set aside.
  3. Wipe out the skillet with paper towel to get rid of any excess brown sugar and butter. Heat the skillet again and add almonds. Stir occasionally until the almonds are golden, about 2-3 minutes. Set aside.
  4. Serve bananas topped with ice cream, drizzled with the honey and chocolate sauce, and topped with almonds.

My fantasy didn’t let me imagine breakfast that would be better than granola. I always made it myself, adding new fruit or seeds every time. I felt energetic and full after it. If I say that I want something sweet to eat, it means a piece of cheesecake only. My mother always made this yummy on weekends and parties because it is my favorite dessert and I refused to have any other. The taste of baked cream cheese seemed to be a taste of fairy cake. That child fantasy is in childhood now, but for dessert, I choose only it.
Preparing for a party in honor of child first day at school, I made some of his favorite snacks. After that, I was thinking of a filling for a cheesecake and none of the ideas was special. “Let’s ask the internet about help”, I said to myself. The needed help was on this blog [/su_column] [/su_row] That was not a recipe of usual cake with cream cheese filling, cheesecake bites. It was new for me too. Cooking of the cake itself was not difficult as usually. What is special in it? I cut the done cake to squares – I was not able to invent it myself before and all the pieces I covered with chocolate. That dessert looked like a real piece of fairy tale. In addition, the taste… My son’s friends and he devoured those bites immediately and said it was the best dessert they ever tasted.

Chocolate Covered Cheesecake Bites

For the crust
  1. Whole graham crackers – 9 pieces
  2. unsalted butter (melted) – 1stick (4 oz.)
For the filling
  1. cream cheese (room temperature) – 2 packages (8 oz. – each) sour cream – 1\4 C.
  2. 1/2 cup granulated sugar – 1\2 C.
  3. eggs – 2 large pieces
  4. flour – 1 Tbsp. Vanilla extract – 1 tsp.
  5. fine sea salt – 1\2 tsp.
For the chocolate coating
  1. Semisweet chocolate – 16 oz.
  2. coconut oil – 4 Tbsp.
Making crust
  1. Combine graham cracker crumbs and butter in a small bowl. Press mixture evenly into a square baking dish (8 by 8-inch), lined with foil. Bake for 10 minutes in the oven preheated to 350 degrees F,until light golden and fragrant. Now reduce heat to 325°F.
Making filling
  1. Beat the cream cheese and sugar with an electric mixer to get it smooth and fluffy – about 3 minutes. Having turned to low speed, put in the sour cream, eggs, vanilla, flour, and salt and beat to combine all the ingredients. But don’t overmix. Pour the batter over the crust and bake for 35 to 40 minutes. It’s normal if the center is a bit jiggle.
  2. Let the cake cool completely on a wire rack. After that freeze for 3 hours to get it very cold and firm (overnight is perfect).
Chocolate coating
  1. Take the frozen cheesecake out of pan and peel away foil. Cut the cake with a sharp knife into 36 bite-size squares.
  2. Microwave the chocolate and coconut oil for 1 to 2 minutes, stirring every 30 seconds, until the mixture is melted and smooth. Line a baking sheet with parchment paper or a silicone-baking mat. Dip cheesecake squares, one by one, in the melted chocolate. Let the excess drip off and place on prepared sheet. Refrigerate. Serve when the chocolate is set. You can store the squares in an airtight container in the fridge or freezer.

  1. 1 (14 oz.) regular Kielbasa (sliced) – 1 piece (14 oz.)
  2. Pineapple chunks – 1 can (20 oz.)
  3. Teriyaki sauce – 3 tablespoons

Like most people I like good food, but I am not a very good housekeeper, that is, I am not good in cooking. And I must confess – I hate spending my leisure time in the kitchen. I prefer doing nothing like watching movies or reading, though having something delicious is a perfect addition. As a rule I buy some cookies or chocolates and get rid of cooking this way. Though I know that homemade bakery is out of competition – it is on the very top. Am I really terminally lazy? No, it is not really about me.
Here is the proof. Last weekend, when I was doing my favorite nothing in the internet, I saw a recipe on bakeorbreak.com that was specially for me given there. It is a berry cobbler.

I read the list of ingredients and instruction and understood – I can do that. There is almost nothing to do – just my favorite – put berries in a dish for baking, cover with handmade crumbs and bake. It was so easy to do, that I didn’t expect for any superb taste. But my cobber had fantastic, unforgettable taste. Let me share my impression. At  first – the top was crispy, on second – the taste was half sour and half sweet – the dessert that is ideal one for me.

Now I have doubts about my laziness. If I find some recipes like this one I will turn to be an ideal housekeeper.If you are such a fan of sweets but lazy for cooking like I am, this recipe is perfect to prove that you can cook and get an amazing bakery.

Ingredients
  1. 1/3 cup yellow cornmeal
  2. 1/4 cup all-purpose flour
  3. 1/2 teaspoon baking powder
  4. 1/2 teaspoon kosher salt, or more to taste
  5. 1/2 teaspoon ground black pepper
  6. Handful of parsley, finely chopped
  7. 1/3 cup milk
  8. 2 cups grilled corn (or if you don't want to grill yours you can use regular corn kernels)
  9. Vegetable oil
Instructions
  1. In a large bowl whisk together cornmeal, flour, baking powder, salt, pepper, and parsley. Add milk and mix together with a wooden spoon until thick and thoroughly mixed through. Add the grilled corn and mix well with the flour mixture until all the kernels are well-coated.
  2. Heat up a skillet over medium high heat and add some vegetable oil to the pan.
  3. Using a 1/3 cup measuring cup, scoop corn mixture out and place into the skillet, gently pressing the mound down so it's flattened. Cook for 5 minutes on one side, or until it's browned, flip, and cook another 5 minutes, or until it's browned. Remove and repeat for all the other corn fritters.
  4. Serve immediately.
Notes
  1. These grilled corn fritters are best eaten the day of but can be kept in the refrigerator for one day. Any longer then it's not as good so eat them up!

I simply adore salads. I make them of as many possible ingredients as I know. Mixing and seasoning salads is fine art for me. It sounds at least strange, but they know my obsession with salads and they also know that my advice helps. I am serious! Just try.I know so many recipes of salads that I was sure – it is impossible to impress with a new one ever. Fortunately I was wrong. On this very useful blog  I managed to find a recipe of salad, which sunk into my soul forever. There only 3 ingredients and lime juice for seasoning! It took no time to make this salad. Yes! Yes! It’s summer! It’s party time! I love my noisy friends, music, having fun and it is my turn to make a party, that is, in my house. Night clubs are good if they are next door, but as a rule you are annoyed by getting home late at night, having drunk much strange alcohol. One night my purse and my friend’s mobile phone were stolen in the night club. Another friend had an awful hangover next day, though he hadn’t drunk much. Something wrong was with the alcohol drinks in that club. Having discussed that night we decided to have a party at home of one of us in turn once a month or so. The reasons are obvious – homemade drinks, and we can stay and sleep at the same place whole night without loss of personal things.

The task of the host is cocktails and the rest (food, music) are guests’. So. Cocktails. I learned a lot of recipes from my friends. They were so different – strong or low alcohol, sweet or hot, beautiful or simple, but it was a real fun and we felt well next day. When it was my turn to have party last time, I searched the internet, learnt a lot of recipes, but there was one here that impressed me so much and the taste is another story. It is absolutely summer cocktail because of the main ingredient – watermelon.This cocktail looks fantastically and it tastes captivating. As a result I have to make and bring this cocktail to every party. It’s a king of cocktails – I think. Have a party and make this cocktail for sure!

Ingredients
  1. 1 watermelon – 12-16 pound
  2. cups vodka – 4 cups
  3. red Jell-O mix – 4 boxes(3-ounce each)
  4. gelatin(unflavored) – 2 boxes(1-ounce each)
Instructions
  1. Cut the watermelon with a large knife into 2 equal halves (lengthwise).
  2. Slice all the way around the perimeter of the watermelon flesh, next to the rind (1 inch from it). Do not to pierce through the skin - Jell-O can easily leak out then. Scrape out the rest with a spoon and make a smooth bowl, leaving 1/2-inch red watermelon flesh on the rind.
  3. Combine the Jell-O mix, the unflavored gelatin, 4 cups of boiling water in a large bowl and whisk until the gelatin is dissolved - about 2 minutes. Now add the vodka and whisk to combine the ingredients.
  4. Pour the mixture into the watermelon bowls evenly. Place the Jell-O filled watermelon bowls in the fridge to refrigerate for about 4 hours.
  5. When Jell-O is done, cut each half into slices, resembling small pieces of watermelon .Serve.

Being a child I had fantastic summer holidays in the countryside where my grandparents live. That was a real freedom. A lot of reasons. No one made me do that I didn’t want to. I could hike to the hills in the neighborhood and explore the nature. I was gathering different flowers that were supposed to be magic. Wearing a wreath made of them I turned to be the queen of those hills. No animals could frighten me because all of them were my subjects and friends at the same time. Once I lost my way home but I wasn’t frightened – I asked a hedgehog to tell my grandparents about my problem. I was a child and I believed it would work and at night my grandpa found me of course(he knew about my hike to the hills and he knew all the paths all around). Next time I had a trip to the forest. It was so exciting to find bushes of wild raspberry or blackberry that grew on their own and nobody could forbid me to eat as many berries as I wanted. But I had a basket and brought it filled up with various berries to treat my grandma and grandpa. [/su_column] [/su_row]I can’t forget the cake which the grandmother baked with those berries. I woke up to the incredible smell of something that I could swallow without looking at. How sweet and fresh it was! Having become a little older I asked my grandma to teach me baking it, but she didn’t have a recipe – ‘just cooked inspired with some ingredients’. Ingredients
  1. blackberries - 3 ounces (about a scant ¾ cup)
  2. raspberries - 3 ounces (about a scant ¾ cup)
  3. unsalted butter of room temperature -½ cup (1 stick) + some more for pan
  4. sugar - 1¼ cups + 2 tablespoons
  5. all-purpose flour - 1½ cups
  6. coarse salt - 0,5 teaspoon
  7. baking powder - ¼ teaspoon
  8. eggs – 2pcs
  9. pure vanilla extract - 0,5 teaspoon
  10. Greek Yogurt, room temperature - 0,5 cup
Instructions
  1. Have your oven preheated to 350 degrees F. Line a loaf pan with parchment paper but leave a little overhang on all sides; then put some butter(you can use oil if you wish) on the parchment. Make a smoothie of blackberries with 1 tablespoon sugar in a food processor. Do the same with raspberries with 1 tablespoon of sugar without the processor. Pour into separate bowls and put aside.Whisk together flour, salt, and baking powder in a medium bowl.
  2. In a large bowl beat together butter (or oil) and 1¼ cups sugar with a mixer until it becomes light and fluffy - about 5 minutes. Add eggs and vanilla and combine them beating in a bowl as needed. Mix on low, add flour mixture in 3 additions, alternating with Greek yogurt, begin and end with flour mixture.
  3. Stir 2 to 3 tablespoons of the cake batter into the bowl with the blackberry puree to get uniformity. Stir 2 to 3 tablespoons of the cake batter into the bowl of raspberry puree to get uniformity.
  4. Pour half the plain paste into the pan and stir with ½ of the blackberry puree -pour half the raspberry puree in the batter. Swirl slightly using a skewer or knife. Top with remaining plain batter and dot with raspberry and blackberry batter as you did with the first layer. Again, swirl the puree-batter mixes into the plain batter - pushing a skewer or knife all the way to the bottom for a full marble.
  5. Bake until you can see golden brown, insert a toothstick in the center of cake, it must come out dry. It will take about 1¼ hours. Leave it in pan for 30 minutes. Serve the cake cool.
