The day I cooked these fantastic chicken wings will be remembered by my kids forever. Having found the recipe here I couldn’t wait to put it to use. Our family planned a picnic in a forest for the day, even sport games there were in our activities list. My children adore badminton and I was sure they would be playing it as much as they would be able to withstand running and jumping and I can’t say that my husband and me wouldn’t join playing. So we needed to have a good supply of food for such a long and eventful day. And I remembered that recipe of wings. It was interesting to try such an unusual way of cooking – shaking ingredients in bags is really new for my experience. Baking after that is much better than roasting of course. [/su_column] [/su_row] We had a lot of different snacks with us in the forest, but my family couldn’t stop eating chicken wings after sports. The wings were really perfect and now I am going to cook them for our family weekend at home. I am sure that this dish will remind us good time and inspire for another picnic.

Ingredients
  1. chicken wings - 20 pieces
  2. all-purpose flour – 3\4 cup
  3. salt – 1\2 tsp.
  4. pepper - 1\2 tsp.
  5. Hot sauce, divided into 3\4 cup & 1 Tbsp.
  6. vegetable oil – 1 Tbsp.
  7. cayenne pepper – 1\2 tsp.
  8. garlic powder – 1\2 tsp.
  9. butter (melted) – 1\2 cup (1 stick)
Instructions
  1. Preheated oven to 400 F
  2. Line a baking sheet with foil. Set a wire rack on the baking sheet and cover it with cooking spray.
  3. Shake the salt, pepper, 1 tablespoon hot sauce, and vegetable oil in a plastic bag to mix. Add the chicken wings to this mixture and seal. Shake for 2 minutes to coat well.
  4. Put the flour with cayenne pepper and garlic powder into another zip lock bag – shake it too. Remove the chicken wings from the first bag to the second one and shake well. Put the wings on the prepared rack and place it in the fridge for an hour.
  5. Melt butter in microwave. Add to the hot sauce and mix. Dip the wings into this mixture and put back on the rack. Bake for about one hour. Turn the chicken wings in the middle of cooking.
  6. Serve with blue cheese or celery sticks.

I saw nothing except my workplace last half a year and I gave up, that is my body let me down and cold made me stay at home. My friends were too busy to visit me. It was awfully boring to be ill and I entertained myself by the internet. I like cooking, so I was looking through various recipes. Here was a nice surprise for me on http, where I got an idea for a small party.My dream is to go to some exotic island, but much work and illness at that time didn’t let my dream come true. So, the recipe of the cocktail in the internet inspired me to recover at home party, having made Pineapple Coolers.

The ingredients are not so exotic to avoid making it. The main ingredient is pineapple and I simply adore it. So, my friends were invited and I made that amazing drink for us. My company suggested that my beverage was non-alcoholic, because they felt pineapple and lime first of all and they were so surprised when I told about rum. This drink is very delicious and it is possible not to add rum, then your kids will enjoy it too.

Ingredients
  1. 1/3 cup yellow cornmeal
  2. 1/4 cup all-purpose flour
  3. 1/2 teaspoon baking powder
  4. 1/2 teaspoon kosher salt, or more to taste
  5. 1/2 teaspoon ground black pepper
  6. Handful of parsley, finely chopped
  7. 1/3 cup milk
  8. 2 cups grilled corn (or if you don't want to grill yours you can use regular corn kernels)
  9. Vegetable oil
Instructions
  1. In a large bowl whisk together cornmeal, flour, baking powder, salt, pepper, and parsley. Add milk and mix together with a wooden spoon until thick and thoroughly mixed through. Add the grilled corn and mix well with the flour mixture until all the kernels are well-coated.
  2. Heat up a skillet over medium high heat and add some vegetable oil to the pan.
  3. Using a 1/3 cup measuring cup, scoop corn mixture out and place into the skillet, gently pressing the mound down so it's flattened. Cook for 5 minutes on one side, or until it's browned, flip, and cook another 5 minutes, or until it's browned. Remove and repeat for all the other corn fritters.
  4. Serve immediately.
Notes
  1. These grilled corn fritters are best eaten the day of but can be kept in the refrigerator for one day. Any longer then it's not as good so eat them up!

Does it happen to you that you want to eat something new, special and it is not a chocolate? It is that what didn’t leave me along during a week last month. I sorted out in my head all possible variants, but I wasn’t able to understand what was necessary for my taste buds and stomach. The workweek was very hard and I needed very nutritious products for each meal. The desire of some unknown dish was growing. I had to solve this annoying problem.
The decision was quite simple – the internet should help me. I was surfing and searching a recipe that would save me. It happened on this blog – burritos – yes, exactly! I was amazed with the ingredients – it was enough to read the directions to swallow my salivating.
[/su_column] [/su_row]I ran to a shop and bought missing products to start cooking the earlier the better. Mixing chicken with cheese and avocado, I tasted the mixture – it was fantastic and I rushed to finish.
When I bit the first piece of burritos, I felt deep relief. So wanted dish was so easy to cook. I also treated my friend who came to visit me and she was amazed with such a brilliant idea that I got in the internet. Now I know what to cook when I get puzzled with unclear wishes of my stomach.

Ingredients
  1. chicken (cooked with 1 Tablespoon of mustard, 1 Tablespoon of olive oil; and shredded) – 2 cups
  2. cheese (grated) – 1 cup
  3. avocado(diced) – 1 piece
  4. cilantro (chopped) – 2 Tbsp.
  5. tortillas – 4 large pieces
  6. sour cream – 4 Tbsp.
  7. oil – 1 Tbsp.
Instructions
  1. Put chicken breast in a skillet with hot oil, sprinkle with salt and pepper and fry for about 5 minutes on each side. Spread 1-tablespoon mustard over the chicken, pour about ¼-cup water add cook with a lid covered for a few more minutes.
  2. Shred the cooked chicken into thin strings.
  3. Mix the shredded chicken, cheese, the diced avocados and cilantro
  4. Smear 1-tablespoon sour cream over each tortilla, add ¼ of the mixture and make a roll.
  5. Heat 1-tablespoon oil in a pan and put all four tortillas on the pan, cook for 2 minutes on medium- high heat on each side until the tortillas are golden.
  6. Serve warm.

Ingredients
  1. Green cabbage - 1 large head (about 2 to 2¼ pounds)
  2. Ground beef – 2 pounds
  3. 1 onion(medium size), minced(best) or grated
  4. 1-2 eggs
  5. 2 cloves of minced garlic
  6. Salt – 2 tsp.
  7. Black pepper – 1 tsp.
  8. Raw long-grain white rice - 1\2 cup
Instructions
  1. butter or vegetable oil – 2tbsp.
  2. 1 clove of finely chopped garlic
  3. 1 chopped onion of medium size
  4. 2 cans (15-ounce) tomato sauce
  5. juice of a lemon or apple cider vinegar – 2,5 tbsp.
  6. ¼ to ¾ cup light brown sugar (white is also possible)
  7. golden raisins – 1\2 cup (if you want)
  8. some chopped parsley for garnish

Everybody complain about heat in summer, though we look forward to escaping winter cold weather. When it’s cold I put on warm clothes, have hot drink and dream about hot season. What is the problem in summer? I can’t see any, just do the same but on the opposite. Is it so bad to have less clothes on, move faster, be more active, having refreshing drinks? Even children know that liquid is extremely necessary for human body. My niece, she is 5, told me that the secret of beautiful shapes is in drinking much liquids. Can I disobey? So, the reasons to drink more in summer are obvious. Is it possible to refuse a glass of icy soda or lemonade when you have to do so much, but midday is still far?

One weekend, staying at home because of heat, I was thinking about night party. Whose idea was it to have fun when it’s hot even at night? It was mine! I had persuaded my friend to get together, having promised a lot of various drinks. It wasn’t about strong drinks – too hot. Classical lemonade was a must, but what else? I experimented with liquids, ice, fruit and berries. Later, searching the internet I found a recipe of raspberry lemonade on this food blog. “It is interesting “, I thought then. Ingredients are not unusual. I made this lemonade and in the evening I heard -“It’s awesome!” from my friends. The taste is just refined and refreshing. We are fans of this lemonade now. I even take a bottle of it to work.It is worth tasting!

Ingredients
  1. olive oil - 2 tablespoons
  2. minced garlic – 2 cloves
  3. diced zucchini – 4 pieces
  4. corn kernels (any kind is good) – 1 cup
  5. dried basil, oregano, thyme - 1\4 teaspoon of each
  6. salt and freshly ground black pepper - to taste
  7. Juice of 1 lime
  8. chopped leaves of fresh cilantro leaves – 2 tablespoons
  9. Parmesan (grated) - to taste
  10. club soda, chilled
  11. Fresh mint and ice, for serving
Instructions
  1. Use a food processor to puree raspberries in it. Then strain it through a fine sieve into a bowl.
  2. Whisk together water and sugar in a large jar to get sugar dissolution. Pour honey in the mix and blend. Mix raspberry blend and lemon juice together then pour in soda and stir once more. Serve, adding ice and fresh mint.

They appreciate my cooking much, but I can see a question in their eyes – “ What kind of pie will you bake next weekend?”. What should I do? [/su_column] [/su_row] It was time to find a new recipe and I did it fortunately – I found a recipe of classic Chicken Pot Pie here. What was the reaction of my family? You wouldn’t believe! They ate it and left no crumbs, but the main thing – they asked me to make it once more. I am happy, because the pie is really delicious and nutritious that is very important in big family. The very interesting thing about it – it is not heavy on the stomach. You can cook it for a family party and no one will be indifferent to it, but thankful to you. It can be a snack and the main course – up to your decision. Try to cook this pie and it will help you very often to feed your company.

Ingredients
  1. Chicken( cooked and chopped) – 2 cups
  2. Butter – 4 Tbsp
  3. Chopped onion – 1\4 cup
  4. Chopped celery – 1\4 cup
  5. Chopped carrot – 1\4 cup
  6. Salt – 1\4 tsp
  7. Flour – 2 Tbsp
  8. Milk – 2 cups
  9. heavy cream – 1\2 cup
  10. chicken base - 1 tsp
  11. Peas(frozen) – 1\2 cup
  12. fresh thyme - 1\2 tsp
  13. frozen puff pastry – 1 sheet
  14. 1 egg(beaten with a fork)
Instructions
  1. Let puff pastry to melt at room temperature and then unfold it gently.
  2. Melt butter in a large bowl over medium high heat.
  3. Add all the vegetables and fry until they start to get tender.
  4. Cook for 1-2 minutes more with flour sprinkled over.
  5. Little by little whisk in milk, heavy cream and chicken base, and boil slowly.
  6. Stew gently over medium heat - let sauce begin to thicken (5 minutes).
  7. Add chicken, peas and thyme on low heat.
  8. Have oven preheated to 400 degrees.
  9. Pour chicken mixture into a square baking dish.
  10. Cut 12 equal strips of pastry.
  11. Form a lattice of puff pastry strip over the chicken mixture.
  12. Brush egg onto the top of the puff pastry with a pastry brush.
  13. Bake for 30-35 minutes. See a deep golden brown color of puff pastry.
  14. Take the pie out of the oven and cool during 5 minutes. You can serve it now.

At last the hike and picnic time came! I will see the sun rise at last!I was inspired with thoughts about that hike, but I came back from my iridescent dreams to real life, when it was clear, that I will be a cook their. It can’t be changed at all. My child is too little to cook; my dear husband is too far from cooking. I was going to relax there, do nothing at all, but having fun. What was the way out? I could make a supply of cooked food. These had to be dishes that might be stored for a long or eaten on arrival. A lot of recipes I had for such a case. It’s rather for a party such a refined snack, but I decided to bring a piece of civilized world to our staying in the wild. We had favorite fruit and vegetables, cookies, bread and marshmallows for cooking on fire, pieces of cooked chicken of course. What happened to cucumber bites? They disappeared first! My husband devoured them so quickly … I tasted just one piece. So, my civilized world got lost and we absolutely dived in the wild.

Cucumber Bites (with Herb Cream Cheese Tomatoes)

Ingredients
  1. Cream Cheese – 4 ounces
  2. Ranch Dressing – 1\4 cup
  3. Dill (or Thyme) – 2 tablespoons
  4. Long Cucumbers – 3-4 pieces
  5. Cherry Tomatoes – 15 pieces
  6. Salt - to taste
  7. Spice ( for Garnish)
  8. Paprika (for sprinkling)
Instructions
  1. Make the herb cream cheese in a stand mixer. Mix the Cream Cheese with the herbs and Ranch dressing until they are well combined. Put this mixture into a piping bag with a star tip.
  2. Peel off the cucumber. Slice into thin pieces. Remove a portion of the center with a melon baler, leaving a half moon crater.
  3. Put the cream cheese into the crater. It must stick out of the top a bit.
  4. Bury a half of cherry tomato into the herb cream cheese.
  5. Sprinkle salt, herbs and spice mix a little to add more color. Cool in the fridge before serving.
  6. ENJOY!

My daughter asked me about the fillings, because meat filling would change the whole story, if Little Red Riding Hood fed The Big Bad Wolf meat pies. I forced much to keep calm after such explanation. And my clever daughter concluded the pies had apple filling and fruit are not good for animals.That funny story gave an idea to cook apple pies, but they had to be special, just like daughter is. My long surfing the internet was awarded by a great recipe on this source. Apple pies with salted caramel – it is something of new wave in cookery. It was exactly that what I needed.

As I started making the dough, my child ran up to me said that she had the best mom, because I had guessed her dream about pies. I was inspired after these words even more than before. An hour past and we got these fantastic apple pies with salted caramel. The smell of them made my daughter rush to the kitchen to have the first pie herself. Her estimation and conclusion was following – Little Red Riding Hood couldn’t have had such pies, because even The Big Bad Wolf would have eaten my pies. What can I add? I am happy to cook for so grateful clients.
By the way, apple pies with salted caramel taste so exciting, that it’s hard to stop eating them, exactly like listening to fairy tales.

For the dough
  1. all-purpose flour – 2 cups
  2. salt – 1\2 tsp.
  3. baking powder – 1\2 tsp.
  4. cold unsalted butter(cut into cubes) – 2 sticks(1 cup)
  5. sour cream – 1\2 cup
For the filling
  1. all-purpose flour – 2 tsp.
  2. diced apples(Granny Smith) – 2 cups
  3. fresh lemon juice – 2 tsp.
  4. cinnamon – 1\2 tsp.
  5. sugar – 1\4 cup
  6. soft caramels( chop it) – 8 pieces
  7. Large flake sea salt
  8. Egg wash (whisk 1 egg with water - 1 tbsp)
  9. Crystal sanding sugar
Making the dough
  1. Take the flour, baking powder and salt and whisk them together in a big bowl.
  2. Add the butter to the dry mixture and work it into the flour with your fingers to get mixture that resembles wet sand.
  3. Stir in the sour cream , and then put the dough on a well-floured work surface.
  4. Knead the dough a few times until it comes together, adding flour if necessary. Make a rectangle of dough, rolling it and dust both sides with flour. Fold it into thirds as if you were folding a letter
  5. Rotate the dough 90º repeat the previous action. Wrap it in plastic tightly and refrigerate it for at least 30 minutes.
Make the filling
  1. Combine the ingredients :apples, lemon juice, cinnamon, sugar and flour in a large bowl and stir until thoroughly mixed. Put aside.
Assembling the pies
  1. Have your oven preheated to 425ºF.
  2. Get the dough out from the refrigerator and unfold it onto a well-floured surface, rolling it out to a square.
  3. Cut out the more the better circles with a circular cookie cutter.
  4. Place six of the dough circles on a cookie sheet covered with parchment . Put a little of the apple filling into the center of each circle, but leave enough of a border around the filling. Put a portion of the caramels and a pinch of sea salt on the filling . Place another dough circle on the filling. Use a fork to stick the edges together, sealing each pie.
  5. Brush each pie with the egg wash, and cut two or three vents on the top with a sharp knife.. Sprinkle the pies with crystal sanding sugar to taste.
  6. 15 minutes baking..
  7. Take the pies out from the oven and let them rest for 10 minutes before serving. Repeat the same with the rest of circles.

Ingredients
  1. 4 cups cooked white rice
  2. 10 ounces white or button mushrooms
  3. 2 tbsp butter
  4. 1 shallot, sliced
  5. 1 jalapeno, diced
  6. 1/4 cups marsala wine
  7. 1 tbsp soy sauce
  8. 1 tsp salt
  9. 1/4 tsp freshly ground black pepper
Instructions
  1. Melt butter in a large skillet over medium high heat.
  2. Add mushrooms and cook until slightly brownish, stirring occasionally, for 10 minutes.
  3. Add shallots, jalapeno, salt and pepper and cook for another 1-2 minutes.
  4. Add marsala wine to the skillet and reduce heat. Cook for 2 minutes more.
  5. Add soy sauce and stir, then add rice. Stir to combine and adjust salt and pepper, to taste, if desired.

Ingredients
  1. 2 cups tater tots, at room temperature
  2. 1 ounce sharp cheddar cheese, cut into 1/4-inch squares
  3. 4 slices bacon, quartered
  4. 1/4 cup brown sugar
  5. 1 tbsp fresh parsley leaves, chopped
Instructions
  1. Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
  2. Wrap each tater tot and cheese square in a piece of bacon. Toss each tater tot with the brown sugar till evenly covered.
  3. Arrange tater tots seam sides down in the baking sheet. Bake for 20-25 minutes, turning them on the other side with metal tongs in the middle of the baking.
  4. Serve sprinkled with parsley and along with sauce, if desired.
