It is not a great discovery that desire to eat gets stronger in cold season; it concerns men first of all. If you are the only female in the family, you can sleep in the kitchen but your men (like my husband and sons) seem to be hungry day-and-night. I am not a lazy-bone, but spending my leisure time in the kitchen is not my big dream. That is why, I always try to cook simple, but delicious and nutritious dishes to feed my men and keep them away from the table for a long time. It is very important on weekends when we stay at home. So, I find various interesting recipes and test them on my dear guys.The last recipe I got, it was on this one blog, let me sigh a relief. [/su_column] [/su_row] Potato baked with cheese can’t be bad – I was sure. I already had just cooked mashed potato and all I had to do – to add cheese, seasoning and bake. I can tell you that I wasn’t wrong, potato puffs were not bad, and they were excellent. My men got full, having eaten only half of the cooked puffs and they didn’t ask about food until dinner. It was my day.I hope that this recipe will help you to feed your family as it did help me.

Ingredients
  1. potatoes (mashed) – 2 cups
  2. large eggs (beaten) – 3 pieces
  3. Cheddar cheese (grated) – 1 cup
  4. chives (minced) – 1\4 cup
  5. diced bacon (optional) – 1\4 cup
  6. Parmesan cheese – 1\4 cup
  7. Salt and freshly ground pepper
  8. Sour cream (to serve)
Instructions
  1. Grease a mini muffin pan well and preheat oven to 180 degrees C.
  2. Whisk all the ingredients together and season them to your taste.
  3. Put the mixture with a spoon into the prepared muffin pans. Strew the tops with Parmesan cheese and bake for 20 minutes - the tops are golden brown and the cheese is melted.
  4. Let the puffs cool in the pan for 5 minutes, and get it out gently with a spoon or knife. Serve warm with sour cream.

Ingredients
  1. 3-4 large potatoes, sliced into wedges
  2. 4 tbsp olive oil
  3. 2 tsp salt
  4. 2 tsp garlic powder
  5. 2 tsp Italian seasoning
  6. 1/2 cup shredded parmesan cheese
  7. fresh chopped parsley or cilantro, ranch or blue cheese dressing for dipping, if desired
Instructions
  1. Preheat oven to 375 F. Grease a large baking sheet with oil and set aside.
  2. Place potato wedges into a large bowl. Toss with olive oil. In a small bowl, combine salt, garlic powder, and Italian seasoning. Sprinkle potato wedges with the shredded cheese, then sprinkle with the seasoning mixture and toss to coat.
  3. Arrange the potato wedges in the baking sheet in one layer, skin-sides-down. Bake until potatoes are fork-tender and golden, about 25-35 minutes.
  4. Sprinkle with chopped parsley leaves and serve along with dressing for dipping, if desired.

These are apple crescent roses. Doesn’t it sound beautiful? I thought so, having read the name too, but I also was persuaded that it is something difficult to cook. No! Absolutely! I like to bake with dough sheet, which I can buy at a store and spend no time for making it.
The main of this batch beauty are look and smell. It is simply magic to see these “roses” on a plate, going to have tea or coffee (or the drink you prefer) in the family circle. Then, next morning you will find your family members sitting in the kitchen “fighting” for the last piece of apple crescent rose. That happened to my children. I reconciled them – I promised to cook the same in the evening. And I did baked this dish again. My kids kissed me, eating freshly baked “roses”. It is so touching! The taste of this batch is “touching” too – no one will be indifferent to it.

Ingredients
  1. apples – 3 pieces(medium size)
  2. sugar - 4 Tbsp + 5 Tbsp
  3. lemon juice – 2 Tbsp
  4. ground cinnamon – 2 tsp
  5. dough sheet – 1 roll
  6. flour for sprinkling
Instructions
  1. Wash apples and get cores out. Slice them thinly, don’t peel.
  2. Heat 4 cups water, sugar and the lemon juice in a pan to boiling. Add the apple slices and boil until apples are soft.
  3. Place the apples on paper towels to dry and cool completely.
  4. Roll out dough sheet on work face sprinkled with flour. Sprinkle the rest sugar and the cinnamon on dough.Cut dough into 9 strips with a pastry cutter.
  5. Put cooled apple slices along each strip. Roll up each of them and place in muffin cup.
  6. Bake in preheated to 400 F about 20 to 25 minutes or until golden. Remove from pan, and cool on cool before serving.

At last the hike and picnic time came! It’s rather for a party such a refined snack, but I decided to bring a piece of civilized world to our staying in the wild. We had favorite fruit and vegetables, cookies, bread and marshmallows for cooking on fire, pieces of cooked chicken of course. What happened to cucumber bites? They disappeared first! My husband devoured them so quickly … I tasted just one piece. So, my civilized world got lost and we absolutely dived in the wild.

Cucumber Bites (with Herb Cream Cheese Tomatoes)

Ingredients
  1. Cream Cheese – 4 ounces
  2. Ranch Dressing – 1\4 cup
  3. Dill (or Thyme) – 2 tablespoons
  4. Long Cucumbers – 3-4 pieces
  5. Cherry Tomatoes – 15 pieces
  6. Salt - to taste
  7. Spice ( for Garnish)
  8. Paprika (for sprinkling)
Instructions
  1. Make the herb cream cheese in a stand mixer. Mix the Cream Cheese with the herbs and Ranch dressing until they are well combined. Put this mixture into a piping bag with a star tip.
  2. Peel off the cucumber. Slice into thin pieces. Remove a portion of the center with a melon baler, leaving a half moon crater.
  3. Put the cream cheese into the crater. It must stick out of the top a bit.
  4. Bury a half of cherry tomato into the herb cream cheese.
  5. Sprinkle salt, herbs and spice mix a little to add more color. Cool in the fridge before serving.
  6. ENJOY!

  1. Wash strawberries and cut off the top of each strawberry. Scoop out a hole using a melon baller. Cut out a bottom of each strawberry so that will let them not to fall.
  2. Place the cream cheese, powdered sugar, vanilla extract, and almond extract into the blender jug and pulse until creamy.

Do you know what the filling is in the pies which Little Red Riding Hood was brining to her grandmother?I didn’t know, but I learnt it from my little daughter. One evening I was telling her this bedtime story and I was absolutely puzzled with the question. My daughter asked me about the fillings, because meat filling would change the whole story, if Little Red Riding Hood fed The Big Bad Wolf meat pies. I forced much to keep calm after such explanation. And my clever daughter concluded the pies had apple filling and fruit are not good for animals.That funny story gave an idea to cook apple pies, but they had to be special, just like daughter is. My long surfing the internet was awarded by a great recipe on this source. Apple pies with salted caramel – it is something of new wave in cookery. It was exactly that what I needed.

As I started making the dough, my child ran up to me said that she had the best mom, because I had guessed her dream about pies. I was inspired after these words even more than before. An hour past and we got these fantastic apple pies with salted caramel. The smell of them made my daughter rush to the kitchen to have the first pie herself. Her estimation and conclusion was following – Little Red Riding Hood couldn’t have had such pies, because even The Big Bad Wolf would have eaten my pies. What can I add? I am happy to cook for so grateful clients.
By the way, apple pies with salted caramel taste so exciting, that it’s hard to stop eating them, exactly like listening to fairy tales.

For the dough
  1. all-purpose flour – 2 cups
  2. salt – 1\2 tsp.
  3. baking powder – 1\2 tsp.
  4. cold unsalted butter(cut into cubes) – 2 sticks(1 cup)
  5. sour cream – 1\2 cup
For the filling
  1. all-purpose flour – 2 tsp.
  2. diced apples(Granny Smith) – 2 cups
  3. fresh lemon juice – 2 tsp.
  4. cinnamon – 1\2 tsp.
  5. sugar – 1\4 cup
  6. soft caramels( chop it) – 8 pieces
  7. Large flake sea salt
  8. Egg wash (whisk 1 egg with water - 1 tbsp)
  9. Crystal sanding sugar
Making the dough
  1. Take the flour, baking powder and salt and whisk them together in a big bowl.
  2. Add the butter to the dry mixture and work it into the flour with your fingers to get mixture that resembles wet sand.
  3. Stir in the sour cream , and then put the dough on a well-floured work surface.
  4. Knead the dough a few times until it comes together, adding flour if necessary. Make a rectangle of dough, rolling it and dust both sides with flour. Fold it into thirds as if you were folding a letter
  5. Rotate the dough 90º repeat the previous action. Wrap it in plastic tightly and refrigerate it for at least 30 minutes.
Make the filling
  1. Combine the ingredients :apples, lemon juice, cinnamon, sugar and flour in a large bowl and stir until thoroughly mixed. Put aside.
Assembling the pies
  1. Have your oven preheated to 425ºF.
  2. Get the dough out from the refrigerator and unfold it onto a well-floured surface, rolling it out to a square.
  3. Cut out the more the better circles with a circular cookie cutter.
  4. Place six of the dough circles on a cookie sheet covered with parchment . Put a little of the apple filling into the center of each circle, but leave enough of a border around the filling. Put a portion of the caramels and a pinch of sea salt on the filling . Place another dough circle on the filling. Use a fork to stick the edges together, sealing each pie.
  5. Brush each pie with the egg wash, and cut two or three vents on the top with a sharp knife.. Sprinkle the pies with crystal sanding sugar to taste.
  6. 15 minutes baking..
  7. Take the pies out from the oven and let them rest for 10 minutes before serving. Repeat the same with the rest of circles.

Ingredients
  1. 4 cups cooked white rice
  2. 10 ounces white or button mushrooms
  3. 2 tbsp butter
  4. 1 shallot, sliced
  5. 1 jalapeno, diced
  6. 1/4 cups marsala wine
  7. 1 tbsp soy sauce
  8. 1 tsp salt
  9. 1/4 tsp freshly ground black pepper
Instructions
  1. Melt butter in a large skillet over medium high heat.
  2. Add mushrooms and cook until slightly brownish, stirring occasionally, for 10 minutes.
  3. Add shallots, jalapeno, salt and pepper and cook for another 1-2 minutes.
  4. Add marsala wine to the skillet and reduce heat. Cook for 2 minutes more.
  5. Add soy sauce and stir, then add rice. Stir to combine and adjust salt and pepper, to taste, if desired.

Ingredients
  1. 2 cups tater tots, at room temperature
  2. 1 ounce sharp cheddar cheese, cut into 1/4-inch squares
  3. 4 slices bacon, quartered
  4. 1/4 cup brown sugar
  5. 1 tbsp fresh parsley leaves, chopped
Instructions
  1. Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
  2. Wrap each tater tot and cheese square in a piece of bacon. Toss each tater tot with the brown sugar till evenly covered.
  3. Arrange tater tots seam sides down in the baking sheet. Bake for 20-25 minutes, turning them on the other side with metal tongs in the middle of the baking.
  4. Serve sprinkled with parsley and along with sauce, if desired.
