Once, cooking dinner for next day( that was Saturday) I was thinking about food, my relation to it, my skills in cooking and one question came to my mind. Why do we always have very simple food on our table? Very special, unusual dishes are for our guests only. We can have parties just for somebody who comes to visit us and my family has a right to taste yummy with guests only. I got upset. A moment later I put aside everything I prepared for cooking and went to explore our fridge. There were not so many products, but enough to use my imagination and let my family have a party without guests.In the fridge I found vegetables and meat. Isn’t it enough? Of course! But I couldn’t find any interesting ideas in my head. [/su_column] [/su_row] I could roast some beef and make a salad, but what is special in it? Then I remembered our family weekend hike to mountains. There was a small café were cuisine of some European country was served. We were delighted with cabbage rolls. They were so juicy with meat and rice inside. My guys asked me to cook them at home, but I absolutely forgot about it after returning home. Thanks God, the rolls came to my mind that evening. So, I took my laptop and found a recipe of these amazing rolls on this blog. How joyful I was, having cooked cabbage rolls, following that recipe. I got the very taste I remember from the mountain café! What about members of my family? They said,” You are a wizard!”. I am happy and inspired to cook festive dishes for them even every day!

Ingredients
  1. 4 rump steaks approximately 1-1.5″ thick, at room temperature
  2. 2 garlic cloves
  3. 2 tbsp fresh rosemary leaves
  4. 3 tbsp butter
  5. 1 tbsp olive oil
  6. salt and pepper, to taste
  7. a splash of white or red wine
Instructions
  1. Mince garlic and rosemary. Add 1 tsp salt or more, to taste, and mince again. This can also be done with a mortar and pestle. Rub the garlic paste on both sides of each steak and season with freshly ground pepper.
  2. Melt butter in a skillet over medium-high heat. Add steaks, and cook for 2-3 minutes per side. Then add wine and extra garlic and rosemary, if desired. Cook for another 2-3 minutes until medium rare. Remove from the skillet and let cool for 5 minutes.
  3. While the steaks are cooling, make the sauce with wine. To the same skillet add a splash of wine and cook until it forms a sauce.
  4. Serve steaks sliced and topped with the sauce.

  1. 1 1/2 to 2 pounds flank steak
  2. 1 package frozen chopped spinach, thawed
  3. 1/2 cup crumbled blue cheese
  4. 7 ounces roasted red peppers, drained and chopped
  5. 2 tbsp seasoned bread crumbs
  6. 1 egg yolk
  7. 3/4 tsp garlic salt
  8. 3/4 tsp ground black pepper
  9. 1 tbsp olive oil
Instructions
  1. Preheat oven to 425 F.
  2. Place steak on work surface. With a sharp knife slice the flank steak parallel to the work surface in half lengthwise, without cutting all the way through. Open up the steak like like you would open a book and flatten slightly, so that it’s evenly thick.
  3. Remove liquid from spinach. Combine it with cheese, peppers, bread crumbs, egg yolk, 1/4 tsp of each garlic salt and pepper in a medium-size bowl.
  4. Sprinkle both sides of steak with an additional 1/4 tsp of each garlic salt and pepper. Spread the filling, leaving about 1″ border on all sides. Lightly press filling onto the steak. Roll the steak very tightly, beginning from the short side.
  5. Once rolled, tie steak at 2″ intervals with a kitchen twine. Rub with oil, then season with the remaining garlic salt and pepper.
  6. Place into the oven and roast at 425 F for 35 minutes, then turn on the broiler and broil for 10 minutes, turning once. Allow to rest for 15 minutes.
  7. Remove the kitchen twine, slice and serve.

  1. Canola or Vegetable Oil – 1\2 Tbsp.
  2. Ground Beef – 1 lb.
  3. Onion (chopped) – 1 piece
  4. Salt – 1 dash
  5. Black Pepper – 1 dash
  6. Cooked Pasta – 1\2 lb.
  7. fluid Tomato Sauce – 15 oz.
  8. 14-½ ounces, Diced tomatoes and green chilies – 14-1\2 oz.
  9. Kidney (or black) beans – 15 oz.
  10. Chili Powder – 1 1\2 tbsp.
  11. Cumin – 2 tsp.
  12. Cayenne powder – 3 dashes
  13. Water – 1\4 cup
  14. Cheddar cheese (shredded) – 2 cups
  15. Sour cream (for topping) – 1\2 cup
  16. Green onions (chopped) – 4 Tbsp.
Instructions
  1. Have the oven preheated to 350 degrees.
  2. A large skillet is on medium high heat, drizzle oil in it. Put the onions and fry for about 3 minutes. Now add the beef, season it with salt and pepper. Cook to change the pink color.
  3. During the beef ground cooking, cook the pasta to firm al dente. Having done it, drain and put aside for a while.
  4. When the beef is cooked, add the following ingredients: tomato sauce, diced tomatoes, beans chili powder, green chilies, cayenne, cumin, water. Stir it and let it simmer for about 5 minutes.
  5. 5 minutes later, stir in the pasta. Mix to combine.
  6. Add the chili pasta mixture in a pan (9×13). Smooth with a spatula and strew with cheese. Put in the preheated oven for 30 minutes – until the edges are bubbling and the cheese has fully melted.
  7. Serve with sour cream and green onions on the top.

  1. bell peppers (any color) – 4 large pieces
  2. Ground of lean beef– 2 pounds
  3. Italian bread crumbs – 1\4 C.
  4. creole seasoning – 1 teaspoon
  5. egg – 1 piece
  6. Parmesan (shredded) – 1\4 C.
  7. red pepper flakes (crushed) – a pinch
  8. garlic (finely chopped) – 3 cloves
  9. olive oil – 1 Tablespoon
  10. fresh parsley (chopped) – 1 Tablespoon
  11. Italian cheeses blend (shredded0 – 1 C.
  12. crushed tomatoes – 1 can (28 ounces)
Instructions
  1. Slice a little the top and bottom of each pepper. Do not throw away the slices. Remove seeds and cut out the ribs. Cut into 3 thick rings and put on a sheet pan lined with parchment. Dice the rest parts of peppers for meat mixture.
  2. For meatloaf mix: blend ground beef with seasoning, bread crumbs, egg, cheese, red pepper flakes, garlic, and remaining diced peppers.
  3. Put meat mixture into each pepper, making a dome of the mixture on each pepper.
  4. Heat a large oven-safe pot with olive oil over medium-high heat.
  5. Cook each stuffed pepper ring for about 4 to 5 minutes on each side until it get browned.
  6. After browned on each side, pour the tomatoes over the pepper rings.
  7. Bake for 35 to 45 minutes at 350 degrees. Add cheese on the top and bake for 5 more minutes. Sprinkle with fresh parsley and serve.

  1. zucchini – 3 large pieces
  2. ground beef – 1\2 lb
  3. chorizo sausage (chopped) – 1\4 cup
  4. cheddar cheese (shredded) – 1\2 cup
  5. feta cheese (chopped) – 1\4 cup
  6. small tomatoes (chopped) – 2 pieces
  7. pinch of cumin
  8. salt \ pepper to taste
  9. spaghetti sauce – 1\4 cup
Instructions
  1. Your oven is preheated to 375 F degrees.
  2. Put the ground beef in a skillet and cook until it's not pink. Add the cumin, salt and pepper to the skillet and stir all the ingredients well. Add the chorizo sausage and spaghetti sauce - cook over medium heat for another 5 minutes.
  3. Wash zucchini and cut them lengthwise. Scoop out the flesh with a spoon
  4. Stuff each half of zucchini with the meat mixture. Put shredded cheese and tomatoes on the top.
  5. Bake the stuffed zucchini for 15 minutes.

Ingredients
  1. beef ground – 1 pound
  2. bread crumbs (any to your taste) – 1 cup
  3. Egg -1 piece plus 1 egg yolk
  4. Garlic(minced) -1 tsp
  5. Onion powder – 1 tsp
  6. Italian seasoning – 1 Tbsp
  7. Salt – 1 tsp
  8. Black pepper – 1\2 tsp
  9. mozzarella cheese – 3-4 sticks (string cheese)
  10. marinara or other sauce for dipping
Instructions
  1. Take cheese sticks and chop them into half inch pieces. Put the pieces on a plate and chill in the freezer until you are going to use.
  2. Put all the ingredients into a bowl. Mush them together with your hands and make everything come together.
  3. Get cheese from freezer. Take out about 4 tablespoons(with an ice-cream scoop) of meat mixture and make a ball. Push a piece of mozzarella into the middle of the meatball. Roll the ball in your hands to make it one-piece with the mozzarella cheese hidden inside. Place the ball inside a slow cooker and do the same with the
  4. rest of meat and cheese.
  5. When you have all the meatballs put in the slow cooker, cover and cook on high for 1-2 hours or on low 3-4 hours. If the cheese is melting out of the balls, don’t worry – it’s normal.
  6. Serve with your favorite sauce or marinara and enjoy!

Ingredients
  1. 3 garlic cloves, minced
  2. 1 small shallot, minced
  3. 2 tbsp fresh parsley, finely minced
  4. 1 tsp sage leaves, finely minced
  5. 1 tsp basil, minced
  6. 2 tbsp olive oil
  7. 1 flank steak (2-2.5 pounds)
  8. 4 ounces thinly sliced prosciutto
  9. 4 ounces thinly sliced provolone cheese
  10. salt and pepper, to taste
Instructions
  1. In a small bowl, combine olive oil with garlic, shallot, parsley, basil and sage.
  2. Cut the steak across, then butterfly and pound the steak into 2 thin rectangles. Lay the steak so that the grain will be parallel to the edge of the work surface. Spread garlic mixture evenly over the steak.
  3. Lay prosciutto, leaving 1″ border along the top edge. Then arrange cheese slices, leaving the same border.
  4. Roll up the steak into a tight log, beginning from the bottom edge. Place on the cutting board seam-side down.
  5. Secure the steak with a kitchen twine, placing the twines in even intervals.
  6. With a sharp knife, cut the roll between each twine. Season with salt and pepper and thread with a toothpick.
  7. Preheat oven to 350 F.
  8. In a cast iron skillet over medium high heat, brown the rolls for 2-3 minutes on each side. Transfer the skillet into oven and bake for another 8-10 minutes or until cooked through.

Ingredients
  1. 2 pounds rkielbasa Polska, cooked, cut into 2″ pieces
  2. 1 tbsp olive oil
  3. 1 head cabbage, chopped
  4. 1 large sweet onion, cut into large pieces
  5. 3 cloves garlic, minced
  6. 2 tsp sugar
  7. 1/2 tsp salt
  8. 1/2 tsp black pepper
  9. 2 tsp rice wine vinegar
  10. 1 1/2 tsp Dijon mustard
Instructions
  1. Heat olive oil in a large nonstick saucepan over medium-high. Add kielbasa and cook for 1 minute, then cook stirring occasionally for 3 minutes more. Transfer to a paper towel-lined plate.
  2. In the same pan, combine cabbage, onion, garlic, sugar, salt, and pepper. Cook for about 10 minutes, stirring occasionally. Add vinegar and mustard, stir, then remove kielbasa back to the sauce pan and cook for another 2 minutes. Adjust more salt and pepper, if needed.
  3. Serve immediately.
