The colourful salad is probably the best idea for hot summer day dinner. And you don’t need to be very creative to make a tasty salad: just pick out your favourite veggies and mix! Add some olive oil, seasonings and fresh or dried herbs for flavour. My inspiration for cooking this dish I found here. Ingredients
  1. 11/2 cups Roma or cherry tomatoes, cut into halves
  2. 1 cucumber, peeled and seeded, cut into cubes
  3. 1 avocado, cut into cubes
  4. 4 ounces feta cheese, cut into cubes
  5. 2 tbsp red onion, finely chopped
  6. 1 parsley leaves, finely chopped
  7. 2 tbsp olive oil
  8. 1 tbsp red wine vinegar
  9. Freshly ground black pepper, to taste
Instructions
  1. Cut tomatoes into halves lengthwise. Peel and seed one cucumber, cut into cubes. Remove rinds from avocado, cut into cubes. Crumble or cube feta. Mix everything in a large bowl. Add chopped onion and minced parsley to bowl.
  2. Combine olive oil, red wine vinegar and black pepper in a separate bowl.
  3. Pour mix over veggies.
  4. Toss gently till veggies are coated with dressing. Serve immediately.
  5. If refrigerating, add avocado in the very end, before serving.
