Ingredients
  1. 1 1/2 cups (plus one tbsp plus two tsp) flour
  2. 1 tbsp baking powder
  3. pinch of salt
  4. 1 tbsp sugar
  5. 1 tsp ground cinnamon
  6. 1 large egg
  7. 1 1/4 cups milk
  8. butter
  9. honey or maple syrup, for garnishing
  10. fresh berries, for garnishing
Instructions
  1. Whisk together flour, baking powder, salt, sugar and cinnamon in a mixing bowl.
  2. Add eggs and milk in a standing mixer bowl, beat on medium high until foamy.
  3. Whisk flour mixture and beaten eggs until combined. Set aside for 15 minutes.
  4. Melt a tsp of butter in a skillet over medium heat.
  5. Drop about 1/8 cup batter into the skillet and cook until it’s risen up and slightly brown on both sides.
  6. Transfer to the plate and cover, meanwhile make the rest the pancakes.
  7. Add more butter to the skillet if needed and work with the rest of the batter.
  8. Serve hot drizzled with honey or syrup and garnished with fresh berries.
