Ingredients
  1. 4 large eggs
  2. 1/2 cup whole milk
  3. 1/2 cup heavy cream
  4. 1/2 cup plus 2-4 tbsp Parmesan, grated
  5. 1/2 tsp dry mustard powder
  6. 1/2 tsp hot sauce
  7. salt and freshly ground black pepper, to taste
  8. 1 large garlic clove, crushed with the side of a knife
  9. medium-size loaf of good-quality bread, cut 1-inch thick
  10. 3 egg yolks
  11. 1/4 tsp dijon mustard
  12. 1 tbsp lemon juice
  13. 1/2 cup plus 4 tbsp butter
  14. parsley or chives, for garnish
Instructions
  1. Preheat oven to 170 F. Adjust a cooling rack over a baking sheet and place into the oven.
  2. Combine eggs, milk, cream, Parmesan, mustard powder, hot sauce, black pepper, garlic, and salt in a bowl of blender and blend until smooth. Pour mixture into a pie plate or an 8x8 dish. Rinse out the blender bowl.
  3. Cut bread into slices, about 1″ thick. Soak the bread in the egg mixture for about 1-2 minutes per side.
  4. Grease a large skillet with butter and heat over medium high. Working in batches, add bread slices and fry for about 2-3 minutes on each side, or until golden brown. Repeat with remaining bread slices, greasing the skillet with butter if needed.
  5. Place bread fried slices on the cooling rack in the oven.
  6. To make the sauce, combine egg yolks, dijon mustard, lemon juice, and hot sauce in a blender bowl. Blend until smooth.
  7. Add butter to a small microwave-safe bowl and microwave, so that it’s very hot. Add melted butter to the egg yolks mixture and blend on low.
  8. Pour the sauce into a bowl and place this bowl into another one filled with very hot water. This will help to keep the sauce warm without making it curdle.
