Ingredients
  1. 2 tbsp olive oil
  2. 2 tbsp butter
  3. 1 whole medium onion, finely cut into cubes
  4. 4 cloves garlic, minced
  5. 30 ounces tomato sauce or marinara sauce
  6. salt and ground pepper, to taste
  7. pinch of sugar or more if desired
  8. 1 cup heavy cream
  9. grated parmesan or Romano cheese, to taste
  10. fresh basil, finely chopped
  11. 24 ounces fettuccine
Instructions
  1. Boil pasta in a pot of salted water and cook as said in the package instructions. Drain well, but reserve 1 cup of cooked pasta water.
  2. Heat butter and olive oil in a large skillet over medium heat. Add onions and garlic and sauté for 1 minute, or until onions begin to turn transparent. Stir in tomato sauce, add salt, pepper, and sugar to taste. Cook for 25-30 minutes, stirring occasionally over low heat.
  3. Turn off the heat and add heavy cream. Add cheese, as much as you want, then check saltiness. Thin sauce with pasta water if needed. Add pasta and basil to the skillet, toss to combine.
  4. Serve immediately sprinkled with grounded parmesan or Romano cheese.
