Ingredients
  1. 8 bone-in, skin-on chicken thighs
  2. 16 ounces baby red potatoes, unpeeled and halved
  3. 16 ounces baby carrots, peeled
  4. 8 tsp brown sugar
  5. 2 tbsp olive oil
  6. 1 ounce Ranch Seasoning and Salad Dressing Mix
  7. 3 cloves garlic, minced
  8. salt and freshly ground black pepper, to taste
  9. 2 tbsp parsley leaves, chopped
Instructions
  1. Preheat oven to 400 F. Grease baking sheet with oil or use non-stick spray.
  2. Coat each chicken thigh evenly with brown sugar taking 1 tsp per thigh.
  3. Arrange thighs, potatoes and carrots in the prepared baking sheet. Drizzle with oil and sprinkle with seasoning mix and garlic, sprinkle with salt and pepper, to taste.
  4. Roast until the chicken is completely cooked through, about 25-30 minutes, an internal temperature must be 165 F. Then switch over to broil and cook until sugar is caramelized, about 2-3 minutes.
  5. Serve hot, sprinkled with chopped parsley leaves.
