Ingredients
  1. 2 medium chicken breasts (about 1 1/2 pounds)
  2. 1/4 cup balsamic vinegar
  3. 1 clove garlic
  4. 2 tbsp olive oil, divided
  5. Salt and pepper, to taste
  6. 1 tbsp butter
  7. 2 tbsp balsamic vinegar
  8. 3 tbsp honey
Instructions
  1. Slice chicken breasts into six strips each. Place the chicken strips in a zip top bag along with 1/4 cup of balsamic vinegar, one clove minced garlic, 1 tbsp olive oil, and salt and pepper to taste. Lightly shake the bag, so that the strips will be evenly coated with marinade, place into the fridge for at least 30 minutes or up to overnight.
  2. Heat another tbsp olive oil in a large skillet over medium heat. Add chicken strips and cook until browned on both sides, about 2-3 minutes per side. Place the cooked chicken stripes in the plate.
  3. Turn heat to medium-low and add butter and the remaining 2 tbsp of balsamic vinegar to the skillet. Dissolve the mixture with leftover marinade using the spoon, add honey and increase the heat. Let simmer until thickened, about 5 minutes.
  4. Add salt and pepper to taste. Return the chicken back to the skillet and gently toss to evenly coat with honey balsamic sauce. Serve immediately.
