Ingredients
  1. 4 boneless, skinless chicken breasts, pounded to 3/4 - 1" thickness)
  2. salt and pepper to taste
  3. Pinch of ground thyme
  4. 1 tbsp fresh basil, chopped
  5. 1/2 cup flour
  6. 2 tbsp butter
  7. 2 tbsp olive oil
  8. 1 shallot, thinly sliced
  9. 3 cloves garlic, minced
  10. 1/2 cup chicken broth
  11. 1/2 cup dry white wine
  12. 2 lemons
  13. 3/4 cup heavy cream
  14. 1/4 cup capers, drained
  15. Fresh parsley and basil, for garnish
  16. 1 pound thin spaghetti
Instructions
  1. In a skillet over medium high, heat butter and oil.
  2. Combine flour with, salt, pepper and chopped basil. Sprinkle each side of the chicken breast with thyme, salt and pepper, then roll in the flour mixture.
  3. Working in batches, place chicken in the skillet. Cook until golden brown on each side, about 4 minutes per side. Transfer to a plate and set aside. Repeat to the remaining chicken.
  4. Meanwhile, boil pasta in a large pot of salted water until al dente.
  5. Reduce heat to medium low and add sliced shallots and garlic to the skillet you used for cooking chicken, stir to sauté for 1 minute. Add chicken stock, wine, lemon juice, heavy cream, and capers. Stir to combine and bring to a low boil. Add salt and pepper, if needed. Let simmer the for 3 minutes.
  6. Rinse and drain pasta, transfer to a bowl, drizzle with oil and add basil and parsley. Toss to combine.
  7. Slice chicken into strips and serve over cooked pasta. Pour sauce atop and sprinkle with chopped parsley and basil.
  8. Serve immediately.
