Ingredients
  1. 2 medium zucchini
  2. 1/2 cup freshly grated Parmesan cheese
  3. Garlic powder, salt, freshly ground black pepper, optional
Instructions
  1. Preheat oven to 425 F. Line a baking pan with foil or parchment paper, lightly apply a non-stick cooking spray.
  2. Wash and dry zucchinis, cut into approximately 1/4-inch thick rounds. Arrange zucchini slices on the prepared pan, leaving a little space between each slice. Sprinkle with garlic powder, salt and freshly ground black pepper, if desired. Spread a thin layer of cheese on each slice using a small spoon, if needed.
  3. Bake for 15-20 minutes, until cheese atop turns slightly golden and bubbly.
  4. Serve immediately.
