Ingredients
  1. 4 slices bacon, cut in halves crosswise
  2. 1/3 cup plus 1 tbsp milk
  3. 4 eggs, slightly beaten
  4. salt and pepper, to taste
  5. 1/4 cup chopped red bell pepper
  6. 1 can (8 ounces) Pillsbury™ crescent dinner rolls
  7. 1 cup Mexican cheese blend, shredded
  8. chopped fresh cilantro, if desired
  9. 1 cup salsa sauce, if desired
Instructions
  1. Preheat oven to 375 F. Line a large baking sheet with parchment paper
  2. In a skillet, cook bacon over medium, for about 4 minutes or until cooked through. Transfer to the paper towels and wipe the skillet, reserving only 2 tsp of bacon fat. Set aside.
  3. In a medium bowl, whisk together 1/3 cup of the milk, eggs, salt and pepper. Add chopped bell pepper. Pour the mixture into the skillet. As eggs begin to set push the cooked portions with spatula to outside edge of the skillet, avoiding constant stirring. Cook until eggs are cooked through, about 5-6 minutes.
  4. Unroll the dough and separate it into 8 triangles. Line a baking sheet with parchment paper and arrange dough triangles with shortest sides toward the center, so they will create a star with 4″ circle in center. Make sure the points of crescent dough don’t hang over edges of baking sheet.
  5. Place bacon slices on each dough triangle, top with 1/3 cup of the cheese onto the part of dough closer to the center. Add egg mixture and sprinkle with another 1/3 cup of the cheese. Pull points of dough triangles over toppings, and roll to create a ring. Gently brush the dough with 1 tbsp milk and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes or until nicely browned. Remove from heat and let cool for 2 minutes. Transfer onto the serving plate. Serve garnished with chopped cilantro.
