The Idaho sunrise are potatoes stuffed with cheese, crumbled bacon, and egg, sprinkled with green onions and baked till the cheese inside turns into a melted stringy tastiness. This is probably one of the fanciest and at the same time tastiest ideas I had ever met here, for breakfast, lunch or dinner, and you surely must try it! An Idaho Sunrise: Egg Stuffed Baked Potatoes

Ingredients
  1. baked potatoes, cooled
  2. melted butter
  3. kosher salt and freshly ground black pepper
  4. cheese (any of your choice), shredded
  5. eggs
  6. additional fillings: sautéed vegetables, bacon or ham, if desired.
Instructions
  1. Preheat oven to 350 F.
  2. Cut out a small layer off the top of each potato. Then scoop out insides, making sure a thin layer of potato flesh is left. Transfer potato flesh to another bowl.
  3. Brush insides of each potato with melted butter and season with a salt and pepper. Stuff each potato with cheese and add fillings if desired. Fill potatoes until about 3/4 full. Pour an egg into each potato and season with a little more salt and pepper. Top with chopped green onions, crumbled bacon or any toppings you want.
  4. Arrange potatoes on a baking pan and cook for about 20 minutes or until egg whites are set and yolks soft.
