Ingredients
  1. 4-5 large chicken breasts, trimmed and cut into 1″ thick strips
  2. 1 cup flour to coat the chicken
  3. 6 tbsp olive oil, divided
  4. 1 pound fresh mushrooms, thickly sliced
  5. 1 medium onion, finely diced
  6. 3 garlic cloves, minced
  7. 3 tbsp unsalted butter
  8. 3 tbsp flour for the sauce
  9. 1 1/2 cups chicken broth
  10. 1 tbsp lemon juice
  11. 1 cup half and half
  12. salt and freshly ground black pepper, to taste
Instructions
  1. Preheat oven to 350 F.
  2. Season chicken with salt and pepper and roll evenly in flour.
  3. In a large skillet over medium high, heat 3 tbsp olive oil. Working in batches, add chicken to skillet when oil is very hot and sauté until slightly brown. Remove chicken from skillet and arrange in a 13x9 casserole baking dish.
  4. Clean skillet with a paper towel and heat another 3 tbsp oil, and add sliced mushrooms and diced onions. Sauté until fork-soft and golden brown. Then add garlic and sauté for another 1-2 min. Spread mushroom mixture over the chicken.
  5. In a medium saucepan, melt 3 tbsp butter. Add 3 tbsp flour and cook until lightly golden, about 1-2 min.
  6. Add chicken broth, lemon juice, pepper, and stir until well combined. Add half and half and bring to a simmer. Add salt and pepper, if needed.
  7. Pour the sauce over the chicken and mushrooms. Cover with foil and bake for 45 minutes.
  8. Serve immediately.
